How do Georgians make wine
When we think about wine making in Georgia, at once Qvevri appears in our mind. The Qvevri is an egg-shaped earthenware vessel and Georgians use it for making, ageing and storing the wine.
Qvevris are buried in the ground for a lifetime. Georgians believe, that it interacts with a nature and intensively exchange minerals with the soil, as a result providing unique aromas and flavors to wine.
Georgians practise Qvevri wine-making from ancient times. Children learn how to tend to the vines, press grapes and make wine, through observing their elders. The wine-making process involves pressing the grapes and then pouring the juice, grape skins, stems into the Qvevri. Winemaker seals the wine, so it can ferment for five to six months before reaching maturity.
