How Georgians Make Wine – The Qvevri Tradition

When we think about winemaking in Georgia, the first image that comes to mind is the Qvevri — a large, egg-shaped clay vessel used for fermenting, aging and storing wine.

Qvevris are buried underground, where natural temperature control allows the wine to ferment and mature slowly. This ancient method, recognized by UNESCO, gives Georgian wine its distinctive character and rich flavor.

The process involves pressing the grapes and placing the juice, skins and stems into the Qvevri. The vessel is sealed and the wine ferments for five to six months before reaching maturity.
